About the Role
My client is seeking a dynamic, visionary, and hands-on Director of Food & Beverage to lead the F&B strategy and operations across our prestigious hotel portfolio in Hong Kong. This is a critical leadership role responsible for driving exceptional guest experiences, delivering outstanding financial performance, and elevating our F&B outlets to become benchmarks in Hong Kong’s competitive hospitality and dining scene.
As Director of F&B, you will oversee multiple outlets including fine-dining restaurants, casual dining, banqueting & events, room service, and bars, while shaping innovative concepts that resonate with both local and international guests.
Key Responsibilities
- Develop and execute a comprehensive F&B strategy aligned with the hotel group’s vision, focusing on revenue growth, profitability, and market positioning.
- Lead, inspire, and develop a large team of F&B professionals (culinary, service, stewarding, and support) to deliver consistent 5-star service standards.
- Drive financial performance through effective cost control, menu engineering, pricing strategy, inventory management, and revenue optimization.
- Conceptualize and launch new F&B outlets, menus, and experiences that reflect current trends while maintaining the group’s brand identity.
- Strengthen relationships with key stakeholders, including suppliers, local communities, and corporate clients to maximize banquet and event revenue.
- Ensure full compliance with food safety, hygiene, licensing, and sustainability standards (including responsible sourcing and waste reduction initiatives).
- Collaborate closely with Rooms, Sales & Marketing, Finance, and Engineering teams to deliver seamless guest journeys.
- Monitor market trends, competitor activity, and guest feedback to continuously innovate and improve offerings.
Requirements
- Minimum 10-15 years of progressive F&B leadership experience in luxury hotels or renowned restaurant groups, with at least 3–5 years in a multi-outlet Director-level role.
- Strong track record in managing large teams (100+ staff) and luxury F&B operations, including fine dining and high-volume banqueting.
- Proven ability to drive business performance with deep understanding of P&L management, cost control, and revenue strategies.
- Creative mindset with a passion for food, trends, and delivering memorable guest experiences.
- Excellent leadership, communication, and interpersonal skills with the ability to motivate multicultural teams.
- Thorough knowledge of Hong Kong’s F&B market, licensing regulations, and local supplier networks is highly advantageous.
- Fluent in English and Cantonese (Mandarin is a strong plus).
- Bachelor’s degree in Hospitality Management, Culinary Arts, or related field. Professional certifications (e.g., WSET, ServSafe) are welcomed.
